The Ritz-Carlton Sanya, Yalong Bay has announced the appointment of its new executive chef, Simon Song, in a grand celebration of Culinary Excellence. In his role, Chef Simon will engineer all of the resort’s gastronomic experiences, including menu creation and execution for some of China’s most eminent events, galas and weddings hosted at The Ritz-Carlton Sanya, Yalong Bay.

Simon first developed his culinary dexterity at the precocious age of 13 years old, when he would prepare meals for his two brothers and parents, as they return home from work. His skills were soon recognized at the age of 18, when, as a young infantryman, he was selected as the Armed Forces Service Supervisor during his National Army service, and sent on culinary missions throughout Asia Pacific region for two years. Travels fed his vocation as he instinctively pursued a career in hospitality at one of Singapore’s most renowned luxury hotels.

Cumulating over twenty years of experience as a chef and nearly a decade as executive chef, across Singapore, the Maldives and China, Simon Song brings his expertise in French, Italian, Oriental and American cuisines, along with dynamic management skills to the culinary brigade of The Ritz-Carlton Sanya, Yalong Bay. In 2008, the talented Simon was invited to accompany Australian Master Chef Chris Salans as host chefs during Singapore World Gourmet Summit. The event allowed the young chef to sharpen his finesse towards cuisine while gaining international recognition. Very soon, he moved on his first appointment as Executive Chef the same year, followed by his first appointment in China – Hangzhou, in 2010. In the last seven years, Simon has also led luxury hotel operations in Beijing and Tianjin, including pre-opening procedures, restaurant conceptualization and positioning, and private jet catering services.
